- PICO DE GALLO: Chop all the ingredients and mix them in a bowl. Dress with some oil, the garlic powder anf the salt and pepper.
Stir well then add the tomato paste and water. Take a tortilla and sprinkle with shredded cheese then a tablespoon of sweet corn. Put a tortilla in the pan, then spoon over ¼ each of the beef mixture, cheese and coriander. Using a spatula, flip the quesadilla and cook on. Place a tortilla in the pan and, on one half of the tortilla, layer grated cheese, then spread a spoonful of beef mince on top, (add some of your salsa, if desired) then another layer of grated cheese.
